Panetone trufado com maracujá é o nosso Prato do💶 Dia

O panetone é uma das massas mais consumidas durante o mês de dezembro, já que está atrelada a uma data💶 comemorativa muito especial: o Natal. O Prato do Dia desta quinta-feira (14) traz a receita de panetone de maracujá feita💶 pela chef Zuleika Nunes.

A cozinheira conta que o panetone surgiu em Milão, pois há uma lenda de que um padeiro💶 chamado Toni acabou se apaixonando pela filha de outro padeiro e queria agradar o futuro sogro. Com isso, criou um💶 pão bonito e irresistível. Sem ter ideia de como iria nomear o prato, as pessoas começaram a chamá-lo de Pani💶 do Toni, que significa Pão do Toni. Tempos depois, esse nome deu origem ao Panetone.

Ingredientes

Para a esponja do panetone

120💶 ml de água 140 gramas de farinha de trigo10 gramas de fermento biológico seco

Para a massa

Raspas de 1/2 laranja maduraRaspas💶 de 1/2 limão taiti70 gramas de açúcar refinado5 gemas1 pitada de sal350 gramas de farinha de trigo1 colher de sopa💶 de essência de panetone5 gramas de melhorador de farinha80 gramas de manteiga75 ml de água1 colher de sopa de mel200💶 gramas de frutas cristalizadas50 gramas de uva passa (opcional)

Para o recheio

250 g de chocolate branco200 g de creme de leite10💶 g de pó saborizante de maracujá

Modo de preparo

O primeiro passo é preparar a esponja. Misture a água, farinha de trigo💶 e o fermento em um recipiente. Deixe descansando por 30 minutos. A mistura vai estar ativa e borbulhando. Acrescente à💶 esponja o açúcar, ovos e a essência de panetone. Depois, adicione a água, raspas de limão e laranja na mistura.💶 Caso não tenha raspas de laranja em casa, a chef explica que as raspas de mexerica servem para substituir o💶 ingrediente.

Dê uma leve misturada. Para a massa ficar macia, coloque o leite em pó e o mel. Misture tudo utilizando💶 um batedor de claras. Siga para o preparo da massa.

Jogue a farinha aos poucos na mistura, usando as mãos para💶 mexer na massa até ela ficar com uma consistência grudenta. Acrescente a manteiga e, logo em seguida, é preciso sovar💶 a massa. O ideal é que ela fique elástica ao abrir. Adicione o melhorador de farinha e o sal.

Novamente, deixe💶 a massa descansando para alcançar o ponto correto, evitando deixá-la massuda e sem desmanchar.

Passe um pouco de azeite nas mãos💶 e na bancada em que for dividir e rechear a massa com ingredientes de* bet compreferência, como frutas cristalizadas, uvas💶 passa ou gotas de chocolate forneáveis. O próximo passo é bolear a massa até a superfície ficar lisa. Enforme o💶 panetone e o deixe descansando mais uma vez por cerca de 2 horas.

Quando a massa da sobremesa alcançar a metade💶 da forma, pincele com leite e leve ao forno. O panetone deve assar até alcançar uma coloração dourada.
